🍷 Close Fermentation

Closing a fermentation is the event that gives the wine its version — the third part of the wine key, Wine Id . Release . Version. Pick the crush the wine came from, say which vessels it is now in and how many gallons are in each, and the close does the rest: it records the close, books the gallons into the bulk ledger, and updates what each vessel holds.

A crush can be closed once. If the wine is spread across several vessels, add a line for each one — they are all part of the same close.
